Introduction

​Ugadi, the Telugu New Year, is incomplete without the traditional flavor of Neyyi Bobbatlu. These sweet, melt-in-the-mouth flatbreads are stuffed with a rich lentil-jaggery filling and roasted to perfection with pure ghee. Whether it’s the aroma of the cardamom or the soft texture of the outer layer, Bobbatlu brings the true essence of the festival to our homes.

​Ingredients

​For the Dough (Outer Layer): Maida (all-purpose flour) or Fine Sooji, a pinch of salt, turmeric (for color), and oil.

​For the Purnam (Sweet Filling):(Toor Dal) Jaggery (grated), Cardamom powder, and a teaspoon of Ghee.

​For Frying: Pure Ghee (Neyyi) as required.


Step-by-Step Preparation

​Preparing the Purnam: Boil the 

 until soft but not mushy. Drain the water completely and grind it with grated jaggery into a smooth paste. Cook this mixture in a pan until it thickens, add cardamom powder, and let it cool. Shape them into small balls.

​Preparing the Dough: Mix the flour with water and a generous amount of oil to make a very soft, pliable dough. Let it rest for at least 2 to 3 hours for the best texture.




​Stuffing & Rolling: Take a small portion of the dough, flatten it, and place the purnam ball inside. Seal the edges carefully. Grease a plastic sheet or banana leaf with ghee and gently pat the ball into a thin, even circle.

​Roasting: Place the Bobbattu on a hot tawa. Apply a spoonful of ghee and roast on medium flame until golden brown spots appear on both sides.

​Pro Tips for Perfect Bobbatlu

​Resting Time: Don't skip resting the dough; it ensures the Bobbatlu are soft and easy to spread.

​Consistency: Ensure the purnam is smooth and free of any whole lentils to prevent the Bobbatlu from breaking while rolling.

​Ghee is Key: Always use fresh homemade ghee for that authentic festive aroma.
