Mint Pulao (Pudina Rice) Recipe
Ingredients:-
- Rice: 2 cups (soaked)
- Mint Leaves: 1 large bunch (plucked)
- Green Chillies: 4-5 (adjust to your spice level)
- Ginger-Garlic Paste: 1 tsp
- Vegetables: Potato, Carrot, Knol-khol (as per your choice)
- Tempering/Whole Spices: Bay leaf, Cinnamon, Cloves, Cardamom
- Ghee/Oil: As required
Preparation Method:-
- Prepare the Paste: First, grind the mint leaves, green chillies, and a few pieces of ginger and garlic into a smooth paste using a mixer.
- Tempering: Heat oil and ghee in a pressure cooker or a pot. Add the whole biryani spices and sauté them.
- Sauté Vegetables: Add chopped onions and your preferred vegetable pieces. Let them cook for a few minutes.
- Add Mint Paste: Now, add the prepared mint paste and sauté for 2-3 minutes until the raw smell disappears.
- Mix Rice: Add the soaked rice and mix gently so that the flavors coat the grains evenly.
- Add Water: Pour 2 cups of water for every 1 cup of rice and add salt to taste.
- Cooking: If using a pressure cooker, cook for 2 whistles. Once the pressure settles, serve hot with Raita.

Cucumber Raita Recipe
Ingredients:
- Curd/Yogurt: 1 cup (whisked smooth)
- Cucumber: 1 (finely chopped or grated)
- Onion: 1 small (finely chopped)
- Green Chilies: 1-2 (finely chopped)
- Coriander Leaves: A few (finely chopped)
- Salt: To taste
Instructions:
- Take the curd in a bowl and whisk it thoroughly until it becomes smooth and lump-free.
- Add the chopped cucumber, onions, and green chilies to the whisked curd.
- Add salt according to your taste and mix everything well.
- Finally, garnish with finely chopped coriander leaves.
- Your cool and healthy Cucumber Raita is ready to serve! 🔗
