Ingredients:
Rice (Basmati or Regular): 1.5 Cups (Washed and soaked for 20 mins)
Fresh Coriander Leaves: 1 Cup
Fresh Coconut Slices: 1/2 Cup
Green Chillies: 3 to 4 (Adjust to taste)
Cashewnuts (Godambi): A few (Divided for paste and tempering)
Ginger-Garlic Paste: 1 Teaspoon
Onion: 1 Cup (Sliced)
Green Peas: 1/2 Cup
Whole Spices: Bay leaf, Star anise, Cloves
Ghee / Oil: 2 Tablespoons
Salt: To taste
Water: As required
Step-by-Step Preparation Method:
🌿 Phase 1: Coriander Masala Paste
In a mixer jar, take 1 cup of fresh coriander leaves.
Add 1/2 cup of fresh coconut slices and 3-4 green chillies.
Add a few cashewnuts (godambi) to give a rich, creamy texture to the paste.
Pour a little water and blend into a smooth, vibrant green paste.
🥣 Phase 2: Preparing Pulao in Cooker
Heat 2 tablespoons of oil or ghee in your pressure cooker.
Add whole spices (bay leaf, star anise, cloves) along with the remaining cashewnuts (godambi). Sauté until the cashews turn golden brown.
Add 1 teaspoon of ginger-garlic paste and sauté for a few seconds.
Add sliced onions and sauté till they turn a beautiful golden brown.
Add green peas and sauté for another minute.
🍚 Phase 3: Masala & Rice Mixing
Now, add the prepared coriander masala paste to the cooker.
Sauté well on a medium flame until the raw smell goes away completely.
Add the washed, soaked rice and salt to taste. Mix gently without breaking the rice grains.
Pour the required amount of water and give it a final gentle stir.
Close the cooker lid and pressure cook for 2 whistles on a medium flame.
Serving Suggestion:
Once the pressure releases completely, open the lid and fluff the rice gently with a fork. Delicious, aromatic Coriander Pulao is ready! Serve it hot with refreshing raita.
